In 2009, Zubrzycki came across the traces of a real rarity – the keyboard instrument designed by Leonardo da Vinci, which had been almost unknown and forgotten until then. Fascinated by the facts from the past, Zubrzycki created his own version of Leonardo da Vinci's design in the years 2009–12 and brought an instrument with a unique sound and ready for concert performance to life. The premiere concerts of the Viola organista (on 18 October 2013 in Krakow, as part of the International Royal Krakow Piano Festival, and on 21 October at the Conrad Festival) were a spectacular artistic success and received attracted so much media attention that Zubrzycki was able to present the instrument he had rediscovered and revived in over 90 concerts in 19 countries between 2014 and 2020.
Two albums were released with the viola organista in 2015. The solo album "Viola organista – The da Vinci sound" is unique in many respects: it is not only the first ever recording of a concert with Da Vinci's instrument, but also the first Polish music project to be financed by music lovers from all over the world via the global crowdfunding platform Kickstarter. The album contains eight baroque works (including the only work composed for the keyboard instrument bow, the Sonata for Bow Piano by C.P.E. Bach) and, as a bonus, the music of Leonardo da Vinci – who placed his musical work on the painting "Portrait of a Musician".
Zubrzycki was invited to the second production by the Icelandic singer Björk, who released an acoustic version of her last album "Vulnicura" for voice, viola organista and string quartet.
In 1988, Sławomir Zubrzycki graduated from the Academy of Music in Krakow, where he studied piano in the class of Professor Tadeusz Żmudziński and modern music in the class of Professor Adam Kaczyński. After receiving a Fulbright scholarship, he continued his piano studies at the Boston Conservatory of Music in 1990/91 under the direction of Janice Weber. The pianist also developed his artistic skills by attending masterclasses held by Victor Merzhanov, Michael Lewin, Jerome Lowenthal, Włodzimierz Obidowicz and Johann Sonnleitner (harpsichord).
Sławomir Zubrzycki performs both as a soloist and as a chamber musician and has made several recordings for Polskie Nagrania, Polish Radio and Polish Television. He has worked with Polish Television as a presenter, composer and musical director on the production of educational programmes. Zubrzycki has been involved in the performance of contemporary music, ranging from dodecaphony to instrumental theatre, improvisation and performance art. He was a lecturer at the Summer Academy for Contemporary Music – Avantgarde Tirol in Austria (2005, 2007) and teaches his own piano class at the State Chopin Music Secondary School in Krakow.
Zubrzycki's artistic activities are currently focused on the viola organista. The artist's plans for the next few months include several concerts at European festivals of early and classical music.
